Organic Pink Apples & Chilli Compote
The Organic Pink Apples and Chilli Compote is prepared with Pink Apples, typical of the Sibillini Mountains, and few other simple and wholesome ingredients such as organic cane sugar and organic lemon juice. The combination of the sugary sweetness of the pink apple and the "hotness" of chili peppers, make this jam perfect for accompanying fresh and soft cheeses.

The Pink Apple of the Sibillini Mountains has always grown in the Marche at altitudes between 450 and 900 meters and is characterized by red streaks overlapping the intense green of the unripe fruit. Its size is small to medium, its shape is flattened and irregular, typical of the oldest cultivars. One of its main features is the resistance to pest attacks and therefore is considered a fruit naturally organic. Its peel is rich in pectin and its flesh is full of antioxidants, as to be considered a product absolutely healthy. This cultivation had been almost completely forgotten, fortunately, a few years ago is back in production thanks to the work of the Comunità Montana dei Sibillini; currently it belongs to Slow Food Presidium.

The activity of the social cooperative began in 2007 with the name San Michele Arcangelo, which is also the brand of all the products made, and gave new vitality to the hills surrounding the small town of Corridonia, extending with 48 hectares of land cultivated with the sensitivity of organic. In addition to the sale of fresh products, part of the crops are handcrafted and transformed into products that have the I.C.E.A. and VEGANOK. Processing at low temperatures in vacuum-packed preserves the nutritional principles of the products intact, allowing the preservation of aromas, colors and textures.

The preserves can be used also to make baked desserts: pies, cookies and cakes.
