The most hidden ingredient of Paolo Brunelli's Graffioni is the IGP hazelnut from Cravanzana, which the chocolatier sweets superbly and wraps in the best Piemonte's gianduia. Three pralines are covered with 38% milk chocolate from Ecuador, other three with 62% dark chocolate from Ecuador, two pralines are covered with caramel chocolate and the last one with white chocolate.
