Organic Cherry Compote

The flowering cherry tree reminds inevitably to the cherry blossoms of Japan. Anyway, this tree is typical also on some hills of the Marche; this cultivation, along with other fruit trees, gave to Coop. Sociale Koinoinia, with the brand San Michele Arcangelo, the possibility to colour the hills surrounding Corridonia(MC) and to have delicious fruits. The cherry tree is well suited to organic cultivation; if carefully processed, its fruits keep all the organoleptic and nutritional properties, even once made into jam. To create 100 grams of the Organic Cherry Jam, Coop. Sociale San Michele Arcangelo needs 130 grams of fruit, in order to assure an excellent product.

The activity of the social cooperative began in 2007 with the name San Michele Arcangelo, which is also the brand of all the products made, and gave new vitality to the hills surrounding the small town of Corridonia, extending with 48 hectares of land cultivated with the sensitivity of organic. In addition to the sale of fresh products, part of the crops are handcrafted and transformed into products that have the I.C.E.A. and VEGANOK. Processing at low temperatures in vacuum-packed preserves the nutritional principles of the products intact, allowing the preservation of aromas, colors and textures.

The preserves can be used also to make baked desserts: pies, cookies and cakes.
