Legume Soup
The Legume Soup is a delicious specialty that collects many native varieties of legumes. Made by the custodian farmer Nazareno Medei, it is composed of oak chickpea, roveja and different types of small colored beans. Made with legumes grown in Appignano, in the hills between Ancona and Macerata, this delicious mix is excellent both in soups and in salads and in addition to delighting the palate it is also gratifying to the eye with its variety of colors.

Only in recent years the cultivation of oak and roveja chickpea has been reintroduced in the Marche region thanks to the work of expert farmers. Collected in August, these delicious legumes are dried and mixed with different qualities of small and colored beans to obtain this delicious soup, excellent for warming up winter dinners or for tasty and savory salads in the hot seasons. An excellent source of fiber and vitamins, legumes are an inevitable substitute for animal proteins in a salutary and correct diet.

General information: Legumes are perfect for the creation of delicious soups, but with the addition of tomato sauce or other flavours, they can also be used to toss pasta dish. In any way you want to enjoy them, you need to cook them first. How to eat: soak the legumes for approximately 12 hours. Boil them in salted boiling water for about 40 minutes, or at least until they are tender. Enjoy them according to the recipe you have chosen.
