Quercia Chikpea is a variety that was once widespread in the Marche but it has been almost disappeared. Only in recent years it has been reintroduced, thanks to the work of expert farmers. The chickpea is sown in the first week of April and the flowering period begins in June, while the ripening and harvesting takes place in August. These legumes are an excellent source of fiber, vitamins A, C and vitamin B9, essential for the production and cell renewal; therefore represents an excellent substitute for meat.

General information: Legumes are perfect for the creation of delicious soups, but with the addition of tomato sauce or other flavours, they can also be used to toss pasta dish. In any way you want to enjoy them, you need to cook them first. How to eat: soak the legumes for approximately 12 hours. Boil them in salted boiling water for about 40 minutes, or at least until they are tender. Enjoy them according to the recipe you have chosen.
