The Solfì Beans is small, swollen, pale yellow, and owes its name to the characteristic yellow sulfur (hence called zolfino or Solfino and to shorten Solfì). It is a legume rich in nutrients and low in fat. It has very special qualities, a thin rind, a creamy texture and a delicate flavour. The sowing of beans sulphide is carried out in April and the collection is expected in late July; these legumes grow better in poor and dry soil and do not tolerate standing water. Cultivation is difficult because many operations must be done by hand, this required a lot of care and attention, in addition, each year the yield depends on the weather.

General information: Legumes are perfect for the creation of delicious soups, but with the addition of tomato sauce or other flavours, they can also be used to toss pasta dish. In any way you want to enjoy them, you need to cook them first. How to eat: soak the legumes for approximately 12 hours. Boil them in salted boiling water for about 40 minutes, or at least until they are tender. Enjoy them according to the recipe you have chosen.
