This Pistachio Cream Panettone is made with a soft pure dough with a pistachio spreadable cream heart, covered with a very crunchy almond and pistachio glaze.
The fortune of la Pasticceria Mimosa di Tolentino is due to his skillful pastry chef Roberto Cantolacqua. Since he was a child, Roberto took on with pastry making, thanks to his grandfather who owned a bakery. He has worked since he was teenager in the bakery, a fine flagship of Tolentino. He could be considered one of the best young italian pastry chef, thanks to his innovative and unique products, beautiful to see, and absolutely fine to taste.
Ingredients Dough: type "00" soft wheat flour, butter, sugar, 32% pistachio cream (35% white chocolate: sugar, cocoa butter, whole milk powder, skimmed milk powder, emulsifier: soy lecithin, natural vanilla; pistachio praline: pistachios 42.2%, sugar, almonds 17.8%; seed oil), egg yolks, water, natural yeast, honey, orange paste, salt, vanilla pods. Amaretto icing ingredients: sugar, hazelnuts 10%, almonds 7%, egg white, pistachio grains 5%, bitter almonds 3%, corn flour, potato starch, bitter cocoa. It may contain traces of Peanut.
