The particularity of the Panbrillo with Chocolate and Rum made by La Mimosa pastry is the sourdough used, called "Dino" by the pastry Chef Roberto Cantolacqua. It's a special secret at the basis of the extraordinary leavened products characterized by a unique softness, intensely pronounced aromas and greater digestibility. With high quality row materials such as finest milk, dark chocolat and the intense taste of aged rum, we get a dessert with a touch of originality, to be enjoyed all year round.

Since he was a child, Roberto took on with pastry making, thanks to his grandfather who owned a bakery. He has worked since he was teenager in the bakery, a fine flagship of Tolentino. He could be considered one of the best young italian pastry chef, thanks to his innovative and unique products, beautiful to see, and absolutely fine to taste.

Dough Ingredients: type 00 soft wheat flour, sugar, butter, 12% dark chocolate (cocoa beans, sugar, cocoa butter, emulsifier: soy lecithin), natural vanilla extract, 12% milk chocolate (cocoa butter, whole milk powder, sugar, egg, natural vanilla extract, emulsifier: soy lecithin, barley malt extract), water, egg yolks, sourdough, orange paste, honey, egg white, lemon paste , tangerine paste, salt, seed oil, vanilla pods. Ingredients Alcoholic syrup (ALC. 14% VOL.): water, sugar, rum (distilled from sugar cane, alc. 70% vol.)
