This particular variety of cheese is made from pasteurized sheep's milk processing, with the addition of rosemary, and subsequently subjected to a seasoning for about 25 days. This product is the result of a careful and meticulous workmanship, which starts from the best sheep's milk and rennet, lamb or goat. The workmanship is first and foremost focused on the timing and temperature of cheese processing.
