An evocative name, which brings us immediately to imagine the green heights of the Sibillini mountains, the flocks of grazing sheep and shepherds who watch carefully over them. The result from all this care and dedication are some of the best dairy products from our Region, like the “Pastorello” cheese, made in Belforte del Chienti by Di Pietrantonio dairy farm. It's made with a soft white dough, featured with a fresh and delicate taste, this is the typical “Pecorino” cheese made with pure sheep's milk that can not miss on our tables.

The Pecorino "Pastorello" is obtained from the processing of sheep's milk pasteurized and subjected to a seasoning for about 25 days. This product is the result of a careful and painstaking work, starting from the best sheep's milk and rennet from lamb or kid, everything had a natural origin like all the ingredients used during the preparation. The processing is accurate and most of all is focused on the temperatures and the pace of stirring of this valuable product. Followed by the cleavage of the whey and the break of the curd with a new phase of kneading and then the dough is poured into shaping boxes. Finally the cheese is left to mature for all the time necessary to obtain the real “Pecorino” worthy of the name.

Established in Belforte del Chienti for over twenty years, the family continues to graze outdoors the sheep, reaching the top meadows of the mountains. Di Pietrantonio familiy looks after the sheep to have a good milk, milks the herd and finally turns this delicious milk into wonderful cheeses, to communicate the authentic flavours of the pastures of the Marche.

How to eat: Cut Pecorino into 1 cm slices and serve it with honey or jam or cured meats, you can use this Pecorino also to prepare salads; enjoy it in the way you prefer.
