The Pecorino "Pastorello" is obtained from the processing of sheep's milk pasteurized and subjected to a seasoning for about 25 days. This product is the result of a careful and painstaking work, starting from the best sheep's milk and rennet from lamb or kid, everything had a natural origin like all the ingredients used during the preparation. The processing is accurate and most of all is focused on the temperatures and the pace of stirring of this valuable product. Followed by the cleavage of the whey and the break of the curd with a new phase of kneading and then the dough is poured into shaping boxes.
