The Monovarietal Extra Virgin Olive Oil of this farm is obtained from the pressing of a single variety of olives: the Carboncella. This cultivar is a rarity both for the slow growth of the tree that takes many years before going into production, and for the difficulty in harvesting that can only be done manually. The square shaped glass packaging is delightful and makes this product precious and perfect to give as a gift.

The Extra Virgin Olive Oil is characterized by a yellow-green color, with a very intense perfume. The one made with Carboncella, an olive originating in the ancient historical region of Lazio called Sabina, transfers a unique flavor to the oil with an aftertaste of bitter almond. Carboncella is a medium-sized variety of olive tree, with expanded and dense foliage. The ideal harvesting period is the month of December, when the olives have reached the full maturity. The oil has excellent organoleptic qualities, it is very fragrant, with a hint of grass, almond, rich in polyphenols with excellent conservation.
