Cavallucci represent a typical dessert of the ancient Marche tradition. Of peasant origin, they gradually entered the homes and eating habits of the provinces between Cingoli and the Esino Valley. They belong to the stuffed pasta genre whose origins date back to before the Middle Ages. With a soft consistency, they have a tasty filling made with sapa, walnuts, hazelnuts, almonds, chocolate and coffee.

Cavallucci have an elongated shape and are covered with sugar grains. The dough is soft and not too sweet, made with different ingredients including sapa, prunes, chocolate, coffee and dried fruit. An ancient recipe that preserves the taste of ancient times and peasant traditions. Excellent at the end of a meal accompanied by sweet wines from the Marche region such as Vino Cotto, Vino di Visciola or Vernaccia di Serra Petrona.
