The Roveja is an ancient legume very important for our own tradition. This little wild pea, dark green color almost brown, over the past centuries was grown along the Apennine ridge and it was the real star of farmer diet, who used to consume it along with other poor legumes such as lentils, cicerchia beans and  fava beans. Nowadays very few farmer are still cultivating this ancient legume, and  Medei is one of the company who have made of recovery and preservation of these important species their mission. The roveja lends is really good for delicious soups especially in combination with other vegetables and legumes of  tradition.

The roveja is a small legume like peas from seed color ranging from dark green to brown. In past centuries it was grown throughout the Umbria-Marche Apennines, in particular the Sibilla hills. The roveja, also called Roveglia, you can eat fresh or dried, in this case becomes a great ingredient for soups; it contains a lot of protein, in particular if consumed dry and has a high content of carbohydrates, phosphorus, potassium and very poor in fat.

General information: Legumes are perfect for the creation of delicious soups, but with the addition of tomato sauce or other flavours, they can also be used to toss pasta dish. In any way you want to enjoy them, you need to cook them first. How to eat: soak the legumes for approximately 12 hours. Boil them in salted boiling water for about 40 minutes, or at least until they are tender. Enjoy them according to the recipe you have chosen.
